Full Recipe:
Ingredients
-
4–5 boneless pork loin chops
-
1 1/2 lb (600g) yellow potatoes, peeled and diced
-
2 cups mushrooms, chopped
-
1 medium onion, minced
-
1 tablespoon olive oil or butter
-
6 cloves garlic, minced
-
1 cup heavy whipping cream
-
4 oz (120g) cream cheese, softened
-
1/2 cup (120ml) chicken broth
-
3/4 cup grated parmesan cheese
-
1 tablespoon Italian seasoning
-
1 teaspoon crushed red chili pepper flakes (optional)
-
Sea salt and freshly cracked black pepper, to taste
Directions
-
Arrange diced potatoes at the bottom of your slow cooker. Season lightly with cracked pepper.
-
In a saucepan over medium heat, sauté garlic in olive oil or butter until fragrant (about 1 minute). Add heavy cream, cream cheese, and chicken broth. Simmer gently for 10 minutes, then whisk in parmesan gradually until smooth. Add Italian seasoning and adjust seasoning if needed.
-
Season pork chops with salt. In a hot skillet, sear on both sides until golden-brown. Place pork chops over the potatoes in the slow cooker.
-
In the same skillet, sauté chopped mushrooms and onions. Add them to the crockpot, layering over the pork chops.
-
Pour the prepared cream sauce evenly over everything in the slow cooker. Try to coat the pork chops well.
-
Cover and cook on HIGH for 3–4 hours or LOW for 6–8 hours until pork and potatoes are tender.
-
Serve hot, garnished with chili flakes, chopped parsley, and extra parmesan if desired.
