12 oz fettuccine (or spaghetti, bucatini, linguine, or capellini)

4 slices bacon

3 cloves garlic, minced

1/2 lb boneless skinless chicken breasts, cut into strips

Freshly ground black pepper, to taste

4 large eggs, beaten

3/4 cup freshly grated Parmesan cheese (plus more for garnish)

1/3 cup freshly chopped parsley (plus more for garnish)

In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Drain, reserving 1/2 cup of the pasta water, and return pasta to the pot.

In a large skillet over medium heat, cook the bacon for 5 minutes. Add minced garlic and cook for 2–3 minutes more, until the bacon is crispy. Transfer to a bowl and drain half the bacon fat from the skillet.

Increase heat to medium-high. Add chicken to the skillet, season with salt and pepper, and cook until golden brown and no longer pink, about 10 minutes, flipping halfway through.

Reduce heat to low and return the cooked bacon to the skillet. Toss to combine, then add the cooked pasta and toss again until everything is well mixed.
