2½ lbs boneless, skinless chicken thighs

4 garlic cloves, minced

1½ tablespoons fresh ginger, minced

6 tablespoons honey or maple syrup

3 tablespoons fresh lime juice

3 tablespoons soy sauce

1½ tablespoons sriracha sauce

Make the Marinade:
In a bowl, whisk together the honey (or maple syrup), lime juice, soy sauce, sriracha, minced garlic, minced ginger, and lime zest until well combined. -
Marinate the Chicken:
Season the chicken thighs with kosher salt. Place the chicken in a large resealable bag or bowl and pour half of the marinade over it. Reserve the other half for later. Let the chicken marinate for at least 30 minutes (up to 2 hours for more flavor). -
Cook the Chicken:
Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (discard used marinade) and sear for about 5–6 minutes per side, or until golden brown and fully cooked. -
Thicken the Sauce:
While the chicken cooks, mix the reserved marinade with the cornstarch. Once the chicken is cooked, pour the reserved marinade into the skillet. Simmer until the sauce thickens and coats the chicken. -
Serve:
Garnish with extra lime zest or chopped cilantro if desired. Serve hot over rice, noodles, or with a side of steamed veggies.
